Chocolate patiently waited as I set up her party. Celebrating her 12th birthday!

First and foremost, though this life event is about Chocolate, I would like to take a moment to dedicate a small part to Grizz-Lee who sadly could not be here.
To Grizz – Everyday I wish you were here with me, in every waking moment and every time I sleep. What I promised you during your final days has finally come. Wish you were here to experience it. In September, Chocolate’s 12th birthday came along and being that two months prior, Grizz-Lee had passed, my mindset of “there’s always time [to make them something],” was quickly put to an end. After mourning the loss and knowing Chocolate’s birthday was quickly approaching, I didn’t want to lose an opportunity to make her something special.
With friends from work in attendance, I was able to throw her a small party using one of her favorite fruits, blueberries, to make her this blueberry cake with maple frosting. You can see a short video clip in my latest Instagram stories of us wishing her a happy birthday.

I originally made this cake using smashed blueberries (don’t know what I was thinking there) and later decided to remake it by adding whole blueberries to the batter. The second time around, the cake (as seen below) came out much better. The cake was lighter in color, rather than the previous muddy appearance. And having a soft blueberry spurt in random bites, is always fun to eat.

In case you missed it, this cake can be eaten by humans too! This is probably the best dog safe cake I’ve made to date. Not only did it taste decent, but the texture was on point too! My Chocolate-peanut, prefers to eat with me so the best part about this experience was that the cake was good enough for me to sit along with her to eat some too.
The maple frosting using a cream cheese base is something I would pass on but honestly, it’s not bad. Chocolate would prefer whipped cream as seen in these cupcakes (and so would I) but I was looking to try a different frosting that favored blueberries that was also sturdy enough to hold between the cake layers.

As with all of my dog recipes, every ingredient used is safe for canines. Please keep in mind some dogs may be allergic or have intolerances to certain ingredients. Dog Safe Blueberry Cake with Maple Frosting

Ingredients
BLUEBERRY CAKE
- 1 cup (120 grams) all purpose flour
- 1 teaspoon (5 grams) baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/2 cup (113 grams) no sugar added applesauce
- 1/3 cup (112 grams) pure honey
- 1/4 cup (56 grams) vegetable oil
- 1 large egg (50 grams), room temperature
- 1/2 teaspoon no alcohol vanilla extract (optional)
- 1 1/2 cups (225 grams) fresh blueberries, divided
MAPLE FROSTING
- 8 oz. (226 grams) Neufchâtel cheese or 1/3 less fat cream cheese, softened
- 2 to 3 tablespoons (30 to 45 grams) Grade A maple syrup
Instructions
- BLUEBERRY CAKE: Heat oven to 350°F (180°C). Evenly spray the bottom and sides of two 6-inch (15 cm) round baking pans with baking spray with flour; set aside.
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon and salt; set aside.
- In a bowl fitted to an electric stand mixer with the paddle attachment, beat on medium speed applesauce, honey, oil, egg and vanilla. Gradually mix in flour mixture in two separate parts.
- Fold in 1 cup (150 grams) of blueberries. Divide batter equally between the prepared pans.
- Bake for 22 to 28 minutes or until a toothpick inserted in the center comes out clean or with a few dry crumbs. Leave cakes in the pans to rest for 10 minutes before removing onto a wire rack to cool to room temperature.
- MAPLE FROSTING: Meanwhile, in a bowl fitted to an electric stand mixer with the paddle attachment, beat Neufchâtel cheese with 2 tablespoons of maple. If desired, add another tablespoon of maple, 1/2 tablespoon at a time, for added flavor and to increase smoothness.
- ASSEMBLY: Once cakes are cool to the touch, spread about 1/3 cup of frosting over the top of each cake layer. Stack the two cake layers and add the remaining 1/2 cup (75 grams) of blueberries over the top. ENJOY!
