  • 1 cup (120 grams) all purpose flour
  • 1 teaspoon (5 grams) baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup (113 grams) no sugar added applesauce
  • 1/3 cup (112 grams) pure honey
  • 1/4 cup (56 grams) vegetable oil
  • 1 large egg (50 grams), room temperature
  • 1/2 teaspoon no alcohol vanilla extract (optional)
  • 1 1/2 cups (225 grams) fresh blueberries, divided

  • 8 oz. (226 grams) Neufchâtel cheese or 1/3 less fat cream cheese, softened
  • 2 to 3 tablespoons (30 to 45 grams) Grade A maple syrup

  1. BLUEBERRY CAKE: Heat oven to 350°F (180°C).  Evenly spray the bottom and sides of two 6-inch (15 cm) round baking pans with baking spray with flour; set aside.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon and salt; set aside.
  3. In a bowl fitted to an electric stand mixer with the paddle attachment, beat on medium speed applesauce, honey, oil, egg and vanilla.  Gradually mix in flour mixture in two separate parts.
  4. Fold in 1 cup (150 grams) of blueberries.  Divide batter equally between the prepared pans.
  5. Bake for 22 to 28 minutes or until a toothpick inserted in the center comes out clean or with a few dry crumbs.  Leave cakes in the pans to rest for 10 minutes before removing onto a wire rack to cool to room temperature.
  6. MAPLE FROSTING:  Meanwhile, in a bowl fitted to an electric stand mixer with the paddle attachment, beat Neufchâtel cheese with 2 tablespoons of maple. If desired, add another tablespoon of maple, 1/2 tablespoon at a time, for added flavor and to increase smoothness.
  7. ASSEMBLY:  Once cakes are cool to the touch, spread about 1/3 cup of frosting over the top of each cake layer. Stack the two cake layers and add the remaining 1/2 cup (75 grams) of blueberries over the top.  ENJOY!
