Woah! Time sure does fly when you’re having fun! Christmas is just moments away and I’ve got another festive cookie for you!
Before diving in, I just want to give a special thanks to the International Association of Culinary Professionals (IACP) and to Valley Fig Growers for my winning ticket to be a guest to attend Bake the Holidays presented by IACP.
From beginning to end, this was a bake-along event while learning new baking techniques from some of the best pastry chefs! Definitely a fun experience getting to know the bakers and to see how each of them use their own tricks on how to whip up some amazing bakes! And through a very cool Virtual Cookie Party hosted by none other, Dorie Greenspan, I also got to taste a bit of this fun in these cookies adapted from one of the bakers, Umber Ahmad.

There were at least three other cookies recipes provided by the bakers of IACP that I wanted to try but my gosh, the time flew by so fast! Umber’s recipe was probably one of the quickest so I started here. Her recipe, Mah Ze Dahr PB + DC (peanut butter and dark chocolate cookies) looked amazing at the time she baked them. I wanted to replicate this and with it being so close to Christmas, I also wanted to keep things festive.

Though peppermint candies can be enjoyed any time of the year, you know when it comes to the holidays, this is a must to have on your table! There’s nothing like a breathe of wintry freshness as you bite into its chewy chocolate center. Add a striped coating of melted white chocolate with a few sprinkles of crushed peppermint candies and this takes it over the edge in that peppery minty freshness. The white chocolate drizzle gives that gentle touch of softness to the peppermint. You can leave it if you like and keep the cookies plain or dip one half of the cookies into the melted chocolate and sprinkle the candies. The choice is yours to use your creativity!

Peppermint Chocolate Cookies

Soft and Chewy Peppermint Chocolate Cookies are a Festive and Delightful addition to any Holiday cookie box or as a Sweet Gift to Someone Special to Embrace in the Christmas spirit.
Ingredients
- 3/4 cup (70 grams) cake flour
- 1/2 cup plus 1 tablespoon (90 grams) all-purpose flour
- 2 tablespoons (20 grams) dutch cocoa
- 1/2 teaspoon cornstarch
- 1/2 teaspoon kosher salt
- 1/4 teaspoon baking soda
- 1/2 cup (113 grams) unsalted butter, softened
- 1/2 cup plus 1 tablespoon (100 grams) dark brown sugar
- 1/4 cup (50 grams) granulated sugar
- 1 large egg (55 grams), room temp
- 1/4 teaspoon peppermint extract or emulsion
- 4 oz (113 grams) white chocolate, chopped
- 25 mini peppermint candy canes, pulverized
Instructions
- Line 2 large cookie sheets with parchment paper or a silicone baking mat; set aside. In a medium bowl, whisk cake flour, all-purpose flour, cocoa, cornstarch, kosher salt and baking soda; set aside.
- In a large bowl, using an electric mixer on medium speed, mix butter, brown sugar, granulated sugar until light and fluffy, about 5 minutes. Mix in egg and peppermint.
- Decrease the speed of the electric mixer to low and gradually pour flour mixture into the butter-sugar mixture until a dough begins to form. The dough will be very sticky and have a slight sandy appearance.
- Form 1 inch balls of dough (about 30 grams) and place 2 inches apart from one another onto the prepared cookie sheets. Cover with plastic wrap and place sheets in the freezer to stiffen for about 10 minutes.
- Heat oven to 350°F (175°C). Once ready, remove plastic wrap and bake cookies for 14 to 16 minutes or until the center doesn’t appear wet and when lightly touched, tops springs back. Allow cookies to cool over a wire rack for 20 minutes.
- In a small bowl, melt white chocolate in the microwave at 30 second intervals stirring in between each interval until about 75% of the chocolate has melted. Continue stirring until the remaining chocolate has melted from the residual heat. Drizzle over the cookies and sprinkle peppermint candy. ENJOY!
