Having made this roasted French garlic chicken for the first time earlier this year, I’ve now probably made it about a dozen times. It’s become one of my favorite easy chicken dinners. A no-fail recipe that’s fantastic each and every time! Simply toss shallots, garlic, and a few herbs with a white wine-broth over chicken and you’ll have yourself the most succulent savory meals you’ve ever had in an hour!
And don’t underestimate the sauce! That’s where all the flavor is at. The chicken soaks up a good portion of it making the meat tender and practically falling off the bone. But the sauce is so good, I’ve caught myself slurping a few spoonfuls. I like to serve the garlic chicken in a shallow bowl over jasmine rice drenched with its flavorful sauce. If you want to do it like the French, serve it with crusty bread to soak it up!

How to Make French Garlic Chicken
With this recipe, you can use any part of the chicken: dark meat (thighs and drumsticks) or white meat (breasts). Note that dark meat will be significantly more tender. To save time from peeling many garlic cloves, use two large heads of garlic as seen in the images below. Cut the top of each garlic head and carefully remove its outer skin. I recommend still using a few loose garlic cloves to scatter throughout the dish to fully capture the delicious garlic flavor.

Roasted French Garlic Chicken

Ingredients
- 1 medium (50 grams) shallot or onion, sliced thin
- 40 (50 grams) garlic cloves, skins removed
- 4 to 6 sprigs fresh rosemary
- 4 to 6 sprigs fresh thyme
- 1 1/2 pounds (680 grams) or 6 to 8 chicken quarters, thighs or legs with skin
- 1/4 cup (56 grams) olive oil
- salt and ground black pepper, season to taste
- 1/2 cup (120 grams) chicken broth
- 1/2 cup (120 grams) white cooking wine (chardonnay or pinot grigio)
EQUIPMENT
Instructions
- Heat oven 400°F (205°C). In a 9×13 inch (23×33 cm) baking dish, spread shallots evenly over the bottom of the dish. Place about 10 garlic cloves on top with 2 to 3 sprigs of rosemary and thyme. Arrange chicken skin side up.
- Using a basting brush, coat chicken with oil and season with salt and pepper. Place remaining sprigs of rosemary and thyme, and garlic around and in between the chicken.
- Pour broth and wine around the chicken. Avoid pouring liquid over the chicken to not rinse off the seasoning.
- Roast uncovered for 45 minutes to 1 hour or until chicken is golden brown and reaches an internal temperature of 165°F (74°C) in the thickest part. For crispy and darker chicken skin, broil for about 5 minutes.
- Remove chicken from oven and spoon liquid over the top to keep the skin hydrated. Serve with rice, mashed or roasted potatoes, or pasta.
