After making a browned butter peach cobbler, my mind on peaches has forever changed; I cannot go another summer without them. I had been dying to get my hands on making something with strawberries and peaches together so while remembering how much I loved the last peach cobbler, I figured, let’s make it again but bigger and with berries. A bigger dessert, means more for me to share!

At first glance, the buttermilk biscuits [cobbler] are the showstopper but beneath this layer is where the flavor’s at! Although the biscuits are undeniably delicious and compliment the fruits’ greatness, the fruit does the heavy lifting. It’s juicy, it’s warm, it’s sweet, it’s buttery, has a pop of zesty freshness, with the slightest touch of warm spice, altogether in one! A mouthful of words but all very true. So, even though the fruit carries most of the load, it simply wouldn’t be the same without its counterpart, homemade biscuits. They are so good and puff up beautifully when baked resembling cobblestone, hence how cobblers got its name.

When using a unique size baking dish, it may be difficult to know if you have enough fruit. Below are two ways to find out: the fast way and the best way. If you fully prepare the fruit by cutting and removing all pits, this will be the most accurate. For any cobbler, ensure the pre-baked fruit reaches to the rim. During baking, it may bubble and splatter over the rim therefore, using a baking sheet on the lowest rack to catch any drippings can be used. Ultimately, the fruit will soften and shrink about an inch below the rim. This is ideal as it gives room for the biscuits to rise.


Cobblers are one of the easiest desserts to make. Yet if you want to make an easier dessert than this, a crisp or a crumble may be more suitable. Either way you make yours, serve it warm with a scoop of ice cream. For me, this is a dessert that must be made at least once a summer to get that cozy, nostalgic feeling of bliss!

STRAWBERRY PEACH FILLING 

  • 8 tablespoons (113 grams) unsalted butter
  • 5 tablespoons (69 grams) brown sugar
  • 5 tablespoons (60 grams) granulated sugar
  • 2 tablespoons (16 grams) cornstarch
  • 2 teaspoons (6 grams) lemon zest
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 8 medium yellow peaches, peeled, pitted and cut into 1/2-inch slices
  • 1 pound (454 grams) fresh strawberries, hulled and quartered

BISCUIT TOPPING

  • 1 1/2 cup (180 grams) all purpose flour
  • 6 tablespoons (72 grams) granulated sugar
  • 3 tablespoons (29 grams) cornmeal
  • 1 tablespoon (10 grams) baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (125 grams) buttermilk
  • 6 tablespoons (85 grams) unsalted butter, melted
  • 1 teaspoon (5 grams) pure vanilla extract
  • 1 tablespoon (10 grams) coarse sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. FILLING: Heat oven to 375°F (190°C). Place a 12×9 inch (30×22 cm) baking dish over a rimmed baking sheet; set aside.
  2. In a small skillet over medium heat, melt butter. Stir continuously until butter has turned to light golden to amber color, about 5 minutes. Quickly remove from heat and transfer brown butter to a small bowl.  You should notice dark specks within the melted butter and a nutty aroma; set aside.
  3. In a large bowl, whisk brown sugar, granulated sugar, cornstarch, lemon zest, cinnamon and nutmeg. Add peaches and strawberries and gently stir to evenly coat the fruit.  Pour browned butter over the strawberry-peach mixture and stir once more. Transfer mixture into the baking dish.
  4. Bake uncovered for 25 minutes or until the mixture looks hot and bubbly.
  5. TOPPING: Meanwhile, in a large bowl, whisk flour, granulated sugar, cornmeal, baking powder, baking soda and salt.
  6. In a small bowl, whisk buttermilk, butter and vanilla. NOTE: do not combine the dry and wet ingredients until the strawberry-peach filling is done baking.
  7. In a small bowl, stir coarse sugar and cinnamon together; set aside.
  8. Once the filling has finished baking, remove from the oven and increase the temperature to 425°F (220°C).
  9. Combine the wet ingredients into the dry ingredients and mix until just combined. The batter will resemble a crackly, sticky dough.  Drop spoon a mound of dough over the fruit, about 1 inch apart from the next mound of dough. Sprinkle cinnamon-sugar. 
  10. Bake for 15 to 18 minutes or until the biscuit topping is golden brown and cooked thoroughly.  Transfer cobbler to a wire rack and allow it to cool for 15 minutes. Best served warm with vanilla ice cream. ENJOY!
