Classic Peanut Butter Cookies

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup creamy peanut butter
  • 1/2 cup (1 stick) butter, room temperature
  • 1 1/4 teaspoons pure vanilla extract
  • 1/2 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs


  1. Sift together flour, baking powder, and salt in a mixing bowl; reserve. 
  2. In a large mixing bowl, cream the peanut butter, butter and vanilla together until smooth.
  3. Add the sugars and cream for one more minute.  Then, mix in the eggs one at a time. Mix in the flour half at a time.
  4. Wrap the dough in plastic wrap and refrigerate for at least 2 hours.
  5. Once chilled, roll or scoop the dough into 1 1/2-inch balls, and place 2 inches apart on an ungreased or silicon-lined baking sheet.
  6. Use a fork to flatten each ball by making a crisscross pattern.
  7. Bake for 15 minutes or until golden.  Remove cookies from oven, and let cool on the baking sheet for 5 minutes.  Transfer to a cooling rack with a spatula, and allow to cool to at least warm before serving.
