Strawberry Apple Baked French Toast

Description

Stuffed Baked French Toast soaked in a Maple Cinnamon batter giving flavors reminiscent to the Original French Toast with a pop of Tart Fresh Strawberries and Apples and a generous smear of Apple Butter!


Ingredients

  • 6 large eggs
  • 1 1/2 cups (360 ml) oat milk or regular milk
  • 4 tablespoons (60 ml) salted butter, melted
  • 2 tablespoons (30 ml) maple syrup
  • 1 tablespoon (15 ml) pure vanilla extract
  • 1 teaspoon (5 grams) ground cinnamon
  • 1 bread loaf
  • 15 oz (425 grams) apple butter
  • 1 to 2 granny smith apples, sliced 1/8 inch thin 
  • 1 dozen fresh strawberries; sliced

Instructions

  1. Heat oven to 350°F (175°C). Grease a 9×13 inch pan with butter or nonstick cooking spray; set aside. 
  2. In a large shallow bowl, whisk together eggs, milk, butter, syrup, vanilla and cinnamon until all ingredients are thoroughly mixed; set aside.
  3. Slice bread 1 inch (2.5 cm) thick leaving a slight hinge at the bottom of every other cut to create a “sandwich.”  Generously spread about 1 tablespoon of apple butter in between each sandwich.  Dip each sandwich into the batter and allow bread to soak for 30 seconds.  If using stale bread, soak for up to 1 minute.  Position each sandwich upright or lay on a slight angle. 
  4. Insert sliced strawberries and 2 slices of apple side by side into each sandwich. Alternatively, you can sprinkle strawberries over the top.  Pour batter over the bread ensuring each slice is soaked.  Cover and refrigerate for 2 hours or overnight. 
  5. Using a large spoon or turkey baster, drip excess batter from the pan over the top of each slice.  Bake for 50 minutes or until bread appears dry and golden.  Upon baking, if the crust begins to brown too quickly, lay a sheet of foil over the top but do not seal to the pan. 
  6. Remove French toast from the oven and allow it cool for 10 minutes.  Sprinkle with powdered sugar and drizzle maple syrup.  Serve warm and ENJOY!
