Soft and Chewy Peppermint Chocolate Cookies are a Festive and Delightful addition to any Holiday cookie box or as a Sweet Gift to Someone Special to Embrace in the Christmas spirit.

- 3/4 cup (70 grams) cake flour
- 1/2 cup plus 1 tablespoon (90 grams) all-purpose flour
- 2 tablespoons (20 grams) dutch cocoa
- 1/2 teaspoon cornstarch
- 1/2 teaspoon kosher salt
- 1/4 teaspoon baking soda
- 1/2 cup (113 grams) unsalted butter, softened
- 1/2 cup plus 1 tablespoon (100 grams) dark brown sugar
- 1/4 cup (50 grams) granulated sugar
- 1 large egg (55 grams), room temp
- 1/4 teaspoon peppermint extract or emulsion
- 4 oz (113 grams) white chocolate, chopped
- 25 mini peppermint candy canes, pulverized
Instructions
- Line 2 large cookie sheets with parchment paper or a silicone baking mat; set aside. In a medium bowl, whisk cake flour, all-purpose flour, cocoa, cornstarch, kosher salt and baking soda; set aside.
- In a large bowl, using an electric mixer on medium speed, mix butter, brown sugar, granulated sugar until light and fluffy, about 5 minutes. Mix in egg and peppermint.
- Decrease the speed of the electric mixer to low and gradually pour flour mixture into the butter-sugar mixture until a dough begins to form. The dough will be very sticky and have a slight sandy appearance.
- Form 1 inch balls of dough (about 30 grams) and place 2 inches apart from one another onto the prepared cookie sheets. Cover with plastic wrap and place sheets in the freezer to stiffen for about 10 minutes.
- Heat oven to 350°F (175°C). Once ready, remove plastic wrap and bake cookies for 14 to 16 minutes or until the center doesn’t appear wet and when lightly touched, tops springs back. Allow cookies to cool over a wire rack for 20 minutes.
- In a small bowl, melt white chocolate in the microwave at 30 second intervals stirring in between each interval until about 75% of the chocolate has melted. Continue stirring until the remaining chocolate has melted from the residual heat. Drizzle over the cookies and sprinkle peppermint candy. ENJOY!
