Named “Ultimate” Blueberry Banana Bread because without a doubt, this is THE BEST! Super Soft, Tender and Moist, this bread will have you hooked!

If there is one thing I can toot my own horn at making, that would be banana bread. I’ve bought a few slices of the store brand here and there but nothing compares to the moist, tender crumb of a bread seen in front of you.
As with any quick bread, the recipe is straightforward; simple and easy to follow even for the novice baker. A fool-proof bread I love to make when I’m in the mood for something sweet and warm. Slather a generous amount of salted butter melted into its crumb and a tall glass of cold milk, I’m on cloud nine!

The trick to getting this bread to remain exceptionally soft and tender is the SOUR CREAM! Yes, believe it! You don’t taste the smallest bit of tang sour cream holds yet, it creates a wonderful richness to the bread lasting for days ahead. Most cakes, muffins and breads do very well with the addition of sour cream. You can see that here in the BEST carrot cake ever made!

If by now I haven’t convinced you into trying this bread recipe, know that you are truly missing out on having that calming, blissful moment when your eyes roll back and you find yourself in immense satisfaction. Each time I make this recipe, portion control is out of the question! I am having at least 2 slices, maybe 3 [when no one’s looking]. Although I’ve said it before that I’m not big on bread, this one in particular, is my weakness.
On a separate note, if you sensed this bread may look somewhat familiar, you’re definitely on to something. This is a remake to the original found –> HERE. The biggest change was making one loaf rather than two as the former recipe calls. I didn’t need that much bread. I’ve also added the lengthwise-sliced banana laid over the top to create a catchy look. If you choose to do the same, I recommend using a banana that is firm or in its early ripening stage to lay on top of the loaf. A very ripe banana could be too soft and possibly dark which may not result in a “pretty loaf.”

Blueberries add a gentle touch of a mild sweetness but if you are not up for the berries, skip them and it will not affect the overall taste and texture. Perhaps swapping them out for chopped toasted walnuts could be a nice addition in a new depth of flavor.
Either way you like it, I’m sure this recipe will be in rotation in your very own kitchen!

Ultimate Blueberry Banana Bread

Ingredients
- 1 1/2 cups plus 1 tablespoon (362.5 grams) granulated sugar, divided
- 1/2 teaspoon ground cinnamon
- 1/2 cup (113 grams) unsalted butter, softened
- 2 eggs (110 grams)
- 3 ripe bananas (255 grams), mashed
- 8 oz (227 grams) low fat sour cream
- 1 teaspoon (5 grams) pure vanilla extract
- 2 cups (240 grams) whole wheat flour
- 1/2 cup (45 grams) quick or rolled oats
- 1 1/2 teaspoons (6 grams) baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh or frozen blueberries
- 1 large banana, sliced lengthwise (optional)
Instructions
- Heat oven to 350°F (175°C). Grease a 9×5 or a 10×4 inch loaf pan. In a small bowl, mix 1 tablespoon (12.5 grams) sugar and cinnamon and lightly dust the bottom and sides of the pan; set the rest to the side.
- In a large bowl using an electric mixer on medium speed, mix butter and 1 1/2 cups (300 grams) sugar until light and fluffy.
- Mix in eggs, mashed bananas, sour cream and vanilla. Mix in flour, oats, baking soda, baking powder and salt. Fold in the blueberries. Pour the batter into the prepared pan. Lay sliced banana over the batter.
- Bake for 1 hour and 15 minutes. Check for readiness at the 1 hour mark. The loaf is ready once a toothpick inserted in the center comes out clean. Allow the loaf to cool in the pan for 15 minutes before removing onto a wire rack for further cooling. Once warm to the touch, cut into 1/2 inch slices and ENJOY!
